This honey lavender latte has a light, lavender flavor. The sweetness from honey is found in both the syrup, as well as a honey drizzle on top. You can add dry or fresh lavender flowers on top for an extra floral touch.

I made this latte in honor of Mother's Day. My mom loves to get honey lavender lattes at a local coffee shop in our hometown, so I made a few bottles of homemade lavender syrup to send to her for the special occasion.

Ingredients

- Espresso: Use one or two shots of espresso for this latte. At most coffee shops, a 12 oz latte will start with just one espresso shot.
- Milk
- Honey lavender syrup
- Honey: use honey that can be drizzled. If using honey that's hardened, loosen it into a liquid state by heating the bottle in a bowl of warm water.
You can customize this coffee drink recipe completely to your liking! Add an extra shot of espresso, use more or less syrup, and size it up or down as desired.

Lavender Honey Syrup

The syrup is made with dried culinary lavender, honey, and water. Add 1 cup of honey to 1 cup of water, and 3 tablespoons of dried lavender buds to a small saucepan over medium heat. Keep on medium heat until the honey has dissolved, stirring occasionally. Once dissolved, let the syrup sit in the saucepan for 30 minutes to infuse the flavors. Strain into a sealable jar or syrup bottle. Allow the syrup to cool before covering the container.

Substitutions
I use whole milk when making lattes, but you can use any kind of milk that you like!
For alternative milk, oat milk is a popular choice because of how well it compliments the lavender flavor. Almond milk is another popular one. Keep in mind that some types and brands of nut milk will foam better than others. Most grocery stores now carry "barista" versions of nut milk, which have ingredients in them that allow the milk to froth easier.
I would recommend a medium or dark roast ground espresso for this recipe. The flavor of a lighter roast might compete too much with the lavender flavor.
Instructions
Make the Lavender Honey Syrup
Add equal parts 1 cup honey and 1 cup water to a small saucepan. Add 3 tablespoons of dried lavender and keep over medium heat until the honey dissolves. Then, take it off the heat and let it infuse as it cools.

To Make the Latte
Add 1 ½ tablespoons of honey lavender syrup to your mug.

Then, brew the espresso. You'll want to brew one or two shots of espresso per latte, depending on your preferences. See my notes below on how to make this with coffee instead of espresso.

Steam the milk and pour it into your mug.
Drizzle with honey and add a few lavender buds on top if desired

How to Steam and Foam Milk
One of the reasons I got our particular espresso machine is because I love its steam wand. It makes perfectly frothed milk every time! However, if you don't have an espresso steam wand, no worries! You can warm and froth the milk in other ways:
- Use a milk frother
- Use an electric frothing wand
- Warm the milk either in the microwave or on the stove and then shake vigorously in a sealed mason jar

Coffee and Espresso Brewing Variations

Nespresso machines are another popular option for home espresso machines. Another way of making espresso at home would be to use a stovetop espresso maker.

How to make this drink with coffee
To make this drink using coffee instead of espresso, I'd recommend making it like a cafe au lait:
- Brew coffee in your preferred method
- Add the syrup to your mug
- Fill your cup ½ - ⅔ full with hot coffee
- Top with steamed milk and drizzle honey on top
Iced Honey Lavender Latte
This drink is so refreshing as an iced latte! Here's how to make it:
- Add the syrup to the bottom of a glass
- Brew the espresso and add to the glass. Give it a gentle swirl or stir with a spoon to mix the syrup and espresso together
- Add the milk and stir the ingredients together
- Top with a handful of ice and enjoy!
When making this drink iced, I like to rim the edges of the glass with honey and let it fall down the inside walls of the cup.

- 1 ounce espresso use one or two shots of espresso, per your preference
- 1 cup steamed milk
- 1½ tabelspoons honey lavender syrup
- honey
Instructions
- Add 1 ½ tablespoons of honey lavender syrup to your mug.
- Brew espresso and add to your mug.
- Steam and froth the milk to 145-165 F and so that it has a nice layer of foam on top. Pour into your mug.
- Drizzle honey across the foam.
- Sip and enjoy!
