Homemade Strawberry Preserves

Ingredients

  • 4 cups packed fresh strawberries hulled and cut in half
  • 2 tablespoon fresh lemon juice (about half a lemon)
  • ½ cup sugar
  • 2 tbsp cornstarch
  • 2 tablespoon water
  • a pinch of salt

Instructions

  • Add the strawberries, fresh lemon juice, and sugar to a medium saucepan.
  • In a small bowl, whisk the cornstarch and water together until smooth and then add the saucepan along with a pinch of table salt.
  • Heat the strawberry mixture over medium-low heat. Use a potato masher to gently mash the strawberries as they heat and soften. I like to leave mine a little chunky!
  • Keep on the stove for 10-15 minutes. The preserves will be thick and a jam-like consistency. Let cool before storing in a sealed container in the refrigerator.
